Brezglutenski njoki po mehiško

Sestavine:
250 g brezglutenskih njokov Le Veneziane
1 čebula
2 stroka česna
1 paprika
150 g kuhane koruze
150 g kuhanega fižola
400 ml kokosovega mleka Terrasana
200 ml paradižnikove mezge
žlica olja
žlička paprike v prahu
pol žličke origana
pol žličke kumine
žlička soli

Postopek:
1. Na drobno sesekljamo čebulo in jo popražimo na olju, da postekleni.
2. Nato dodamo sesekljan česen in narezano papriko. Vse skupaj pražimo 5 minut.
3. Dodamo kokosovo mleko in paradižnikovo mezgo ter sol, papriko, kumino in origano. Dobro premešamo in počasi polagamo njoke.
4. Kuhamo 5 min na srednjem ognju.
5. Dodamo koruzo in fižol ter kuhamo še 6 minut.
